BBQ Chicken and Mashed Cauliflower
There is nothing more satisfying than BBQ chicken and the thought of mashed potatoes. Only in this case the potatoes are mashed cauliflower and the Medifast friendly meal is low calorie, low carb and low fat which is better yet.

Medifast Friendly BBQ Chicken
Prepare your chicken as usual. I like mine either prepared in a slow cooker crock pot or grilled on a George Foreman grill. When I grill my chicken, I brush on the sugar free Walden Farms barbeque sauce during the grilling process. In the photo above, however, I drizzled the BBQ sauce over 7 oz. of crockpot chicken.
Mashed Cauliflower
1 head of cauliflower, steamed, extra soft
2-3 tsps of Butter Buds
5 tablespoons of non-fat milk to make it creamier
1 oz. of non-fat cream cheese, optional
Puree the cauliflower, Butter Buds, non-fat milk and non-fat cream cheese (optional) until thick and creamy. The consistency will look exactly like creamy mashed potatoes. Top with your choice of non-fat butter substitute.
I was in a hurry, so I ate this on a paper plate. Not the prettiest of photos, but the food is what counts - not the dishware. ;)

Is one head of cauliflower equal to the 1.5 cups allowed for our green? I never steam the whole thing but I also never measure it out (I probably should). I would love to be able to steam the whole head of cauliflower and enjoy instead of storing the rest for the next time..Thanks!

Hi Shawn. In my area heads of cauliflower range in different sizes. Some days I can buy large heads and other days they are quite small especially for the price. What I do is steam the cauliflower heads first and then measure out 1-1/2 cups before mashing. Then re-measure after mashing just to see how much mashed cauliflower the 1-1/2 cups of steam cauliflower made. (Or you could measure it in its raw form.).
How much mashed cauliflower I can eat in a single Green serving generally depends on how much water the cauliflower retains and how much nonfat milk I add. The longer the mashed cauliflower sits in the frig, the more watery it becomes. I hope this helps you.
