Chocolate Muffins or Brownies
I was pleasantly surprised at how well this recipe turned out and when used with a thin layer of my Peanut Butter Icing recipe, it is hands down, the best Medifast muffins I've made. Kudos to all Medifast muffin bakers that I've learned from. I couldn't have done it without you.
After reading and trying tons of Medifast muffin recipes and using several of my own, here's my version of the Best Medifast Muffins. Although they don't have the texture of a brownie, they remind me of the chocolate peanut butter brownies I made years ago.
5 packets of Medifast Maple and Brown Sugar oatmeal
1 packet of Medifast Chocolate Pudding
3 packets of Splenda
2 teaspoons of baking powder
1/4 teaspoon of baking soda
1/2 teaspoon of white vinegar
1/4 cup of Davinci Sugar-Free Chocolate Syrup
1-1/4 cup of cold water, added slowly
Combine all ingredients and mix thoroughly. Add water slowly to ensure that the batter is not too runny. The batter should be moist but not runny or too dry. Drop by tablespoon into 12 regular sized muffin cups. I use silicone bakeware for uniform baking.
Bake at 325 degrees for 35 minutes. Inserted toothpick should come out clean. Remove immediately from pan.
You can eat them iced or not. I spread a very thin layered of my Peanut Butter Icing which adds a little over one Medifast snack to your day. The thinner you spread the icing, the less calories, fat and carbs you add, of course. Keep refrigerated.
Yield: 12 muffins (6 Medifast meals)
Alternative Recipes:
- Chocolate Almond Muffins - Add 6 ounces of finely chopped almonds and 1/2 teaspoon of almond extract. One ounce of almonds would be your daily Medifast snack so avoid the Peanut Butter Icing with this alternate recipe.
- Instead of using my Peanut Butter Icing, spread a thin layer of my Cinnamon Icing on the muffin.
- Cut muffins in half width wise (like two layers) and spread the Peanut Butter Icing or Cinnamon Icing in the middle like a layered cake or sandwich cookie.
- Chocolate Carmel Muffins - Drizzle with slightly heated Walden Farms Carmel Dip

Hi There! I just sent you a pm on the MF website. I am currently baking the chocolate muffins (yum!), and I was wondering if you frost them straight out of the over or after they cool.. As I have said before, THANK YOU for all the great recipes and tips that you so willingly share with everyone. If I didnt have the variety, I would not have stuck with the program... I am currently at 157. Goal is low 140's and I really feel great! I enjoy following your progress...Good Luck and continued success!
btw...The pizza is my FAVORITE! I make it several times a week! YUM!

Hi Shawn. I iced the muffins just before I ate them. But I don't see what it would hurt to ice them after the muffins cooled. The only thing you might experience if you ice them before eating is a problem storing them in the frig, so they don't stick together. Yes, please let me know how they work out for you. I was amazed, and I'm still giddy over them. Wish I could eat more than one in a day. LOL ... guess I could but without the PB icing. :)

WOW, thanks for the quick reply! I just took them out of the over, and I couldn't wait for them to cool.. I sprayed some ICBINB and popped one in my mouth--YUM! These are my new favorites! I ate the last of my poppy seed muffins today, and I am so glad I found your recipe. The more I think about what you said, the more I think I might hold off on the icing. I may save it for a "treat" over the holiday. I have a tendency to "trigger" when I eat something good (especially sweets!). Thanks for the recipe; they are great without the icing. And thanks for always being so helpful!
